The WSOP takes money from the prize pool and gives it to the tournament workers which include dealers, floor people, etc.
There were approximately 6,800 players at the main event last year. Excluding entry fees there was a prize pool of 68,000,000 and 3% of that was taken to give to the tournament workers or $2,040,000. Usually in a poker room, there will be a cage near the table, you give them the money and get your starting stack there. The dealers don't have a ton of chips at the table, since the players are playing against each other.
As far as how much at a table, then totally depends on the stakes you are playing.
The No Limit tables will have a maximum that you can bring to the table. Might be 300 at a 1/2 table. Ask before you buy in.
